shrimp stuffed flounder
I live in Florida so fish is often on the menu. You don't have to use flounder for this, any mild white fish will work.

Ingredients For shrimp stuffed flounder
- SHRIMP STUFFING

1/2 lbpeeled and deveined shrimp, roughly chopped

1 stalkcelery, finely diced

1/4 conion, finely diced

1/2 Tbspchopped parsley

few dashes tobassco to taste

1 tspdijon mustard
-
few dashes worcestershire
-
1/2 tspold bay seasoning
-
1egg, beaten with a fork
-
2 Tbspheavy cream
-
salt and pepper
-
1/2 cbread crumbs
- THE FISH

4flounder fillets
-
salt and pepper
-
butter
-
paprika
-
lemon for serving
How To Make shrimp stuffed flounder

1Preheat oven to 350

2Spray baking pan with oil. Lay two of the fillets in the pan. Sprinkle with salt and pepper.

3Mix all the stuffing ingredients together. Divide and place on top of the fish.

4Split the remaining 2 fillets in half LENGTHWISE. Using 2 pieces, wrap them on the sides of the stuffing.

5Sprinkle with salt and pepper and paprika. Dot with butter.

6Bake for 20-25 minutes, internal temp of the stuffing should be 165.

7Serve with fresh lemon wedges.
