I had some shrimp I needed to use and some green pepper and celery about to expire....so, this is what I threw together. I only had enough shrimp for a few helpings, but the recipe could easily be doubled. So tasty and easy! Season to your own heat tolerance...mine was just right for us! Enjoy!

Ingredients For ~ shrimp creole ~ my way

1/4 cbutter

3/4 cchopped onion

1/2 cfine chopped celery
-
1 mdgreen pepper, fine chopped

1 lggarlic clove, minced
-
8 oztomato sauce
-
1/2 cwater
-
1bay leaf
-
1/8 tspcayenne pepper
-
1/4 tspsalt
-
2 tspparsley flakes
-
1/2 tspslap ya mama cajun seasoning or any cajun seasoning

8 ozraw shrimp- med
-
Preparedrice for 2 or 3
How To Make ~ shrimp creole ~ my way

1In a large skillet over medium heat, melt butter. To this add pepper, celery, onion and garlic. Cook and stir until onion is tender.

2To this add sauce, water and spices. Simmer for 5 minutes.

3Add the shrimp, heat till boiling, cover and simmer for 15 minutes or until shrimp are cooked and sauce has thickened some. Taste and reseason if need be. Remove bay leaf.

4Serve over rice!
