shrimp and veggie stir fry over rice

I usually JUST make up a Veggie Stir Fry, But wanted to add a protein, so added some shrimp. You could add in mushrooms, peas, etc. My husband drizzled over soy sauce. For crunch, you may choose water chestnuts! Yumy either way! Quick and Easy Dinner

Ingredients For shrimp and veggie stir fry over rice

  • 1/2 lb
    raw thawed shrimp
  • 2 lg
    onion-chopped
  • 2 md
    zucchini sliced or cut into moon shapes
  • 2 md
    yellow squash sliced or quartered
  • 4 c
    rice-cooked
  • 3 Tbsp
    garlic parsley salt
  • 2 md
    carrots sliced or quartered

How To Make shrimp and veggie stir fry over rice

    Make up Rice , and set aside. I use my Rice cooker.

    In a Deep nonstick Skillet, sear shrimp until pink. Add in Zucchini Squash, carrots, stirring constantly until veggies are to your liking. I like them Crisp-tender.

    Sprinkle Garlic Parsley Salt. Mix well. Put a portion of Rice on the bottom of bow or plate. (I like to use a soup dish). Heap on veggies.
