Ingredients For shrimp and pasta

1 1/2 qtwater

2 lbshrimp, medium size, unpeeled

16 ozdried spaghetti
-
1 clovegarlic, minced
-
1 tsplemon rind, grated

3/4 colive oil
-
2carrots, scraped and cut into julienne strips
-
1zucchini, cut into julienne strips
-
1sweet red bell pepper, cut into julienne strips
-
3 Tbspfresh basil, minced
-
2 Tbspfresh parsleym minced
-
2 Tbsplemon juice
-
salt, to taste
-
pepper, to taste
How To Make shrimp and pasta

1Bring the water to a boil. Add the shrimp, and cook for 3 to 5 minutes. You will cook them more later....this is just to help in the peeling and deveining!

2Chill. Peel and devein the shrimp. Set aside.

3Cook the spaghetti according to the package directions; drain well. Place in a large serving bowl; set aside.

4Saute the garlic and lemon rind in the oil in a large skillet over medium heat for 30 seconds. Add the reserved shrimp, carrot, zucchini, and red pepper. Saute for 6 minutes or until the shrimp turn pink.

5Add the basil, parsley, lemon juice, and salt and pepper to taste. Saute 2 to 3 minutes. Add the shrimp mixture to the reserved spaghetti. Toss and serve.
