Ingredients For shrimp and fresh vegetable pasta

  • 3 c
    water
  • 1 lb
    unpeeled, medium sized fresh shrimp
  • 3
    Roma tomatoes, cut into 1/2 inch pieces
  • 1 md
    yellow bell pepper, diced
  • 1 md
    red bell pepper, diced
  • 1/2 c
    olive oil
  • 1/4 c
    fresh lemon juice
  • 1/8 tsp
    chili oil
  • 1/4 c
    chopped fresh dillweed
  • 1 Tbsp
    chopped shallots
  • 1 Tbsp
    chopped fresh tarragon
  • 1 Tbsp
    crushed red pepper
  • 1/2 tsp
    salt
  • 1/2 tsp
    black pepper
  • 3/4 c
    frozen English peas
  • 1 1/2 c
    broccoli florets
  • 8 oz
    linguine pasta

How To Make shrimp and fresh vegetable pasta

    Bring the water to a boil. Add the shrimp, and cook for 3 to 5 minutes. Drain well, and rinse with cold water. Chill. Peel and devein the shrimp.

    Place the shrimp in a large bowl. Add the tomato and the next 11 ingredients. Toss gently to combine. Cover and chill.

    Cook the peas according to the package instructions. Drain well, and set the peas aside.

    Cook the broccoli in a small amount of boiling water for 1 minute. Drain well, and rinse with cold water. Add the broccoli to the peas, and toss gently. Add the reserved shrimp mixture, tossing gently to combine.

    Cook the linguine according to the package instructions. Drain well. Add the shrimp mixture, and toss gently to combine. Serve immediately.
