12 lgscallops patted dry

1 1/2 cfrozen peas thawed

1 cfrozen edamame thawed

2 Tbspolive oil

1 Tbspbutter

1 cfresh mint chopped
How To Make seared scallops with minted peas and edamame

1Season the scallops with salt and pepper and set aside at room temp.

2Bring a pan of salted water to a boil. Add the peas and edamame and cook 4 minutes. Drain and set aside.

3Add olive oil to a skillet and sear the scallops 2 minutes per side depending on how thick they are. Remove to a warm plate.

4Add the butter to the pan and add the peas, and edamame back into the pan and add the mint.

5Cook 1 minute. Serve the peas with the scallops.
