1/4 colive oil, extra virgin

6 Tbspmelted butter

juice and zest of 1/2 a lemon

4 clovegarlic minced

1 Tbspdijon mustard

1/4 tsppaprika

2 Tbspfresh parsley minced

1 Tbspfresh chives minced

2 tspfresh thyme minced
How To Make seared scallops with cowboy butter

1To make the cowboy butter. Mix the melted butter, lemon juice and zest, garlic, mustard, and paprika. Whisk until combined. Stir in the parsley, chives and thyme. Set aside.

2Season the scallops with salt and pepper. Add the olive oil to a large skillet. Heat unti smoking. Sear the scallops in batches for about 3 minutes per side.

3Serve the scallops drizzled with Cowboy butter.
