How To Make seared scallops in avocado cream

1Peel the Avocado and remove the pit. Place in food processor with the 1/3 cup olive oil, lime zest & juice, broth, parsley, garlic, salt & pepper. Process until smooth

2Place the 1/4 cup olive oil in skillet. Pat the scallops dry and season with salt & pepper. When the oil starts to smoke. Sear the scallops on each side for about 2 or 3 minutes.

3Serve with the Avocado cream
