46 oz. sea bass fillets

1 cdry white wine

1 cchicken broth

1 smshallot minced

2 clovegarlic minced

5 Tbspcold butter cut into squares

2 tspfresh tarragon chopped
How To Make sea bass with tarragon butter sauce

1Sprinkle fish with salt and pepper. Add a little oil to skillet. Cook the sea bass 2 minutes per side or until desired doneness. Remove from pan and keep warm.

2Add the shallots and garlic to the pan cook 3 minutes. Add the wine and cook until most is reduced. Whisk in the butter one pat at time until each is melted. Stir in the tarragon. Taste and adjust for salt and pepper.

3Serve the sauce over the fish fillets. Garnish with microgreens.
