1 lgegg yolk

1 Tbsplime juice

2 ozbutter melted

fresh chives chopped
How To Make scallops with lime hollandise sauce

1Season the scallops with salt and pepper. Sear in olive oil about 3 minutes each side.

2Place the egg yolk and lime juice in a food processor. With the food processor on drizzle the melted butter into the egg yolk mixture.

3Spoon the Hollandaise sauce over each scallop and garnish with chives.
