Ingredients For scallops with lemon pesto crumbs
- LEMON PESTO

2 cfresh basil

2 cgarlic

1 Tbsplemon zest

2 Tbsplemon juice

1/4 ceach pine nuts & grated asiago cheese

1/3 colive oil

salt and pepper
- SCALLOPS

1 1/2 lbsea scallops

1lemon halved

1/4 cbutter at room temp

1/4 clemon pesto

1/2 cpanko bread crumbs
How To Make scallops with lemon pesto crumbs

1For the lemon pesto place all ingredients except olive oil and salt and pepper in a food processor. Process drizzling in the olive oil. Season with salt and pepper.

2For the scallops Preheat oven 450 degrees. Lightly oil a baking sheet.

3Place the scallops on the baking sheet and squeeze the lemon juice over all. Whisk the butter and pesto together then add Panko

4Spoon the mixture on top of each scallop. Bake for about 10 minutes. Serve with lemon wedges.
