How To Make scallops in lemongrass ginger sauce

1For the sauce Mix the lemongrass paste, garlic, ginger, fish sauce and brown sugar together in a saucepan. Bring to a boil and cook until sugar is dissolved. Set aside.

2In a skillet add the olive oil. Pat the scallops dry and season with salt and pepper

3Sear on each side for about 4 minutes. Spoon sauce on serving plate. Transfer the scallops to the plate and garnish with scallions.
