Ingredients For sauteed scallops with spinach and procuitto

    medium scallop patted dry
  • salt and pepper
  • 2 Tbsp
    olive oil
  • 4 oz
    proscuitto chopped into pieces
  • 2 Tbsp
    balsamic vinegar
  • 2 c
    fresh spinach
  • 2 Tbsp
    lemon juice

How To Make sauteed scallops with spinach and procuitto

  • 1
    First cook the scallops. Season the scallops with salt and pepper. Sear the scallops in the olive oil then transfer to a plate.

    In the same pan add the proscuitto and cook 3 minutes. add the balsamic vinegar and continue to cook 2 more minutes. Add the spinach and lemon juice. Cook until spinach wilts.

    Place the spinach and proscuitto on a plate. Top with scallops and pour some pan juices over the scallops
