4 ozproscuitto chopped into pieces

2 Tbspbalsamic vinegar

2 cfresh spinach

How To Make sauteed scallops with spinach and procuitto

1First cook the scallops. Season the scallops with salt and pepper. Sear the scallops in the olive oil then transfer to a plate.

2In the same pan add the proscuitto and cook 3 minutes. add the balsamic vinegar and continue to cook 2 more minutes. Add the spinach and lemon juice. Cook until spinach wilts.

3Place the spinach and proscuitto on a plate. Top with scallops and pour some pan juices over the scallops
