Ingredients For salmon with thai chili lime noodles

  • SALMON AND GLAZE
  • 4
    skinless salmon fillets
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    soy sauce
  • 4 clove
    garlic minced
  • 1 Tbsp
    toasted sesame oil
  • 1/4 c
    dark brown sugar
  • NOODLES
  • 8 oz
    rice noodles
  • juice of 1 lime
  • 3 Tbsp
    brown sugar
  • 4 Tbsp
    soy sauce
  • 1/2 c
    shiitake mushroom sliced
  • 1 Tbsp
    ginger grated
  • 2 Tbsp
    tamarind paste
  • 1 c
    spinach
  • 2
    red chili seeded and chopped
  • 6
    scallions chopped

How To Make salmon with thai chili lime noodles

    Cook the rice noodles according to directions. Drain and rinse under cold water. Mix the brown sugar, soy sauce, ginger , lime and tamarind paste together and set aside. Place oil in large skillet and add the mushrooms and cook a couple of minutes. Add the chilies. Cook 1 minutes. Pour over the sauce mix. Bring it to a boil and reduce heat to a simmer. Add in the green onions, and spinach. Cook 30 seconds. Stir in the noodles and cook until noodles are warmed through.

    Place the olive oil in a large frying pan over medium high heat. Sear the Salmon on each side about 3 minutes each. remove from pan. Mix the garlic, soy sauce, sesame oil and brown sugar together. Pour into pan and bring to a boil. Add the salmon back in pan and baste the glaze over the salmon. Reduce the heat to low and let cook 2 more minutes.

    Serve the Salmon over the noodles and garnish with some green onions.
