Salmon is such a great vehicle for this tart lemony cream sauce.

Ingredients For salmon in creamy lemony butter sauce

  • 4
    portions of salmon
  • 2 Tbsp
    olive oil
  • 1/4 c
    each fresh lemon juice and white wine vinegar
  • 1 Tbsp
    shallot minced
  • 2 clove
    garlic minced
  • 6 oz
    jar creme fraiche
  • 6 Tbsp
    cold butter cut into chunks
  • salt and pepper to taste
  • fresh parsley for garnish

How To Make salmon in creamy lemony butter sauce

    Preheat oven 350 degrees. Place a large skillet on stove top. Cast Iron works best. Get it hot then add the oil. Wait a minutes then add the salmon skin side down. Place another pan on top to hold the pieces against the pan. Sear about 3 minutes. Turn the pieces and transfer the pan to the oven. Bake until done about 6 minutes.

    Meanwhile add the lemon juice, vinegar, shallot and garlic to a small sauce pan. Bring to a boil and boil for about 5 minutes to reduce. Add the creme fraiche and reduce heat to a simmer. and simmer 1 minute.

    Add the butter one piece at a time whisking constantly until melted. Repeat until all butter is used then remove from heat. Taste and adjust for salt and pepper

    Place the sauce on a plate and arrange the Salmon skin side up on the sauce. Garnish with parsley. Pass extra sauce with Salmon
