Ingredients For salmon in creamy lemony butter sauce

4portions of salmon

2 Tbspolive oil

1/4 ceach fresh lemon juice and white wine vinegar

1 Tbspshallot minced

2 clovegarlic minced

6 ozjar creme fraiche
-
6 Tbspcold butter cut into chunks

salt and pepper to taste

fresh parsley for garnish
How To Make salmon in creamy lemony butter sauce

1Preheat oven 350 degrees. Place a large skillet on stove top. Cast Iron works best. Get it hot then add the oil. Wait a minutes then add the salmon skin side down. Place another pan on top to hold the pieces against the pan. Sear about 3 minutes. Turn the pieces and transfer the pan to the oven. Bake until done about 6 minutes.

2Meanwhile add the lemon juice, vinegar, shallot and garlic to a small sauce pan. Bring to a boil and boil for about 5 minutes to reduce. Add the creme fraiche and reduce heat to a simmer. and simmer 1 minute.

3Add the butter one piece at a time whisking constantly until melted. Repeat until all butter is used then remove from heat. Taste and adjust for salt and pepper

4Place the sauce on a plate and arrange the Salmon skin side up on the sauce. Garnish with parsley. Pass extra sauce with Salmon
