roasted salmon and peppers
This is one of my hubby's special dishes. It is so easy, and full of flavor. Who does not love a sheet pan meal. Feel free to leave off the jalapenos. We have also added fresh green beans.

Ingredients For roasted salmon and peppers

2 Tbspolive oil

4salmon filets (3oz each)

2red bell peppers, chopped

1yellow bell pepper, chopped

1onion sliced

1 slicedjalapenos, fresh, sliced , and seeded
- SAUCE

6 Tbsplemon juice
-
3 Tbspolive oil
-
2 Tbspwater
-
1 Tbspmaple syrup
-
5 clovegarlic, minced
-
1 1/2 tspsea salt
-
1 1/2 tspred pepper flakes
-
1 tspground cumin
-
1/2 bunchfresh parsley, chopped

1lemon, sliced
How To Make roasted salmon and peppers

1Preheat oven to 400 degrees. Grease a sheet pan with 2 tablespoons olive oil.

2Place salmon fillets, red and yellow bell peppers, and onion on the prepared sheet pan.

3Combine lemon juice, 3 tablespoons olive oil, water, maple syrup, garlic, salt, red pepper flakes, cumin, and parsley in a small bowl. Drizzle 2/3 of the sauce over the ingredients on the sheet pan.

4Bake in the preheated oven until salmon is cooked through and flakes easily with a fork, 10 to 15 minutes.

5Serve with lemon slices and remaining sauce.
