Ingredients For prawn glass noodle salad

  • DRESSING
  • 1 Tbsp
    rice vinegar
  • 2 Tbsp
    fish sauce
  • 2 Tbsp
    fresh lime juice
  • 2 Tbsp
    honey
  • 1 tsp
    grated ginger
  • 1 stalk
    lemongrass, chopped
  • 1/2
    freshno chili, seeded and minced
  • 1 Tbsp
    scallions, chopped
  • NOODLE SALAD
  • 4 oz
    glass noodles, cooked according to package directions, drained and run under cold water
  • 10
    prawns, cooked, peeled, and cooled
  • 1/2
    red bell pepper, chopped
  • 1/2
    cucumber, cut into strips
  • 1/2 c
    shredded carrots
  • 1 c
    red cabbage, chopped
  • 1 c
    cherry tomatoes, sliced
  • 1 sm
    shallot, diced
  • cilantro, for garnish
  • cashews, for garnish

How To Make prawn glass noodle salad

    Mix the dressing ingredients together and set aside.

    Mix the ingredients for the noodle salad together and then stir in the dressing.
