I was looking for something to do with my wild-caught salmon fillets besides just grill or broil them since I'm watching my weight. I love pecan crusted salmon, but all of the recipes that I found had way more calories and carbs than I wanted. I decided to experiment and I ended up with this delicious recipe that only has 391 calories and 6 net carbs per serving, according to the nutrition calculator that I used. This is so good, you'll think you're cheating, but you're not!

Ingredients For pecan crusted salmon

  • 1
    6 ounce boneless skinless salmon filet
  • 1 tsp
    mayonnaise
  • 1 Tbsp
    finely chopped pecans
  • 1 Tbsp
    panko bread crumbs
  • 1 Tbsp
    grated parmesan cheese (the kind in the jar is fine).
  • 1 tsp
    melted butter
  • IF YOU NEED MORE THAN ONE FILLET, SIMPLY ADJUST THE INGREDIENTS FOR THE AMOUNT OF FILLETS YOU WANT TO USE.

How To Make pecan crusted salmon

    Preheat oven to 425 degrees. Line a baking dish with foil and spray with cooking spray.

    Place salmon filet into the baking dish. Spread with mayonnaise.

    In a separate bowl, mix together bread crumbs, pecans, cheese, and melted butter. Press onto the top of the salmon filet.

    Bake for 15 to 20 minutes or until crust is lightly browned and fish flakes easily with fork. Enjoy without guilt!
