2 Tbspbutter

4scallions minced

4 clovegarlic minced

1 Tbsplemongrass paste

1 tspcalbrian chilies

1 cwhite wine

1 ccilantro chopped
How To Make mussels with cilantro, chili & lemongrass

1Clean the mussels and remove the beards. Discard any that are open.

2Add the oil to a skillet with a lid. Add the scallions, garlic, lemongrass and chilies. Cook 1 minute. Add the wine and bring to a boil let reduce by half.

3Add the mussels and place a lid on the pan and let the mussels steam about 4 minutes. Shake the pan a little.

4Remove the mussels to serving dishes and stir the cilantro into the broth. Pour the broth over the mussels and serve.
