Ingredients For instant pot butter shrimp

  • FOR THE MARINADE
  • 1/4 c
    whole milk plain yogurt
  • 2 tsp
    each ground cumin, smoked paprika, garam masala, salt and lime juice
  • 1 tsp
    grated ginger
  • 1 clove
    garlic minced
  • 2 lb
    shrimp peeled and deveined
  • SAUCE
  • 6 Tbsp
    butter
  • 2 sm
    shallots chopped
  • 3 clove
    garlic minced
  • 2 tsp
    grated ginger
  • 3 Tbsp
    brown sugar
  • 28 oz
    crushed tomatoes
  • 1 c
    heavy cream
  • 1 tsp
    grated lime zest
  • basamati rice for serving

How To Make instant pot butter shrimp

    In a bowl mix the yogurt, cumin, paprika, garam masal, lime juice, salt, ginger and garlic. Add the shrimp and marinate for 1 hour.

    In the instant pot pick saute and add 3 tbsp of butter. Add the shallots, garlic and ginger and saute 5 minutes. Stir in the brown sugar. cook one more minute.

    Add the crushed tomatoes and heavy cream. Bring to a boil then add lid and pressure cook 8 minutes. Quick release

    Remove the lid and pick saute low and saute for 7 minutes until thickened. add the shrimp with the marinade, lime zest and remaining butter. Cook 5 more minutes.

    Serve over rice.
