    bamboo skewers, soaked
  • 1/4 c
    coarse sea salt

    In a large pot filled with water, add salt and bring to a boil.

    Insert skewers through the tails; set aside.
  • 3
    Drop one at a time the prepared tails in boiling salted water and cook 1 minute per ounce.

    Transfer the tails to an ice water bath to stop them from cooking further.
