1 cwhole unsalted walnuts
- SHRIMP

1 lbshrimp, deveined and shelled

1/4 tspkosher salt

1/4 tspground white or black pepper

1/4 ccornstarch

1/4 crice flour
-
1/3 cwater
-
1/4 tspbaking soda
-
frying oil
-
steamed broccoli, optional
- SAUCE
-
4 Tbspkewpie mayo
-
2 Tbspcondensed milk
-
1/2 Tbsphoney
-
1/2 Tbspfresh lemon juice
How To Make honey walnut shrimp

1To make the candied walnuts, melt the butter, sugar and water together in a non-stick pan. Stir continuously until sugar is dissolved and turns light golden brown. Add walnuts and mix well. Stir continuously for about 3-5 mins. Or until deep golden brown. Right away, pour candied walnuts onto parchment paper and spread evenly so they don't stick together. Let cool and set aside.

2To prepare the shrimp, season the shrimp with salt and pepper. Combine the cornstarch, rice flour, water and baking soda together. Mix well. Coat the shrimp in the mixture.

3For the sauce, mix all ingredients together and set aside.

4In a wok, heat enough oil for a shallow fry. On med-high heat, fry shrimp for 2 mins on each side or until cooked through. Strain in a bowl lined with paper towels to dry out any excess oil.

5In a bowl, mix mayo sauce, fried shrimp, and candied walnuts together. Plate with steamed broccoli, if you like.
