Talk about weeknight-easy! This comes together in minutes and is exceptionally tasty! We use fresh cod that is about 1 inch thick. Any thinner and the cod will be overcooked and dry. We sometimes double up the butter and garlic, then quickly pan fry some boiled red potato wedges in the garlic "sauce". alongside the fish.

Ingredients For garlicky pan-fried cod

  • 3/4 lb
    cod
  • 1 Tbsp
    grapeseed or avocado oil
  • 3 Tbsp
    unsalted butter, cut in pieces
  • 1 Tbsp
    minced fresh garlic
  • 1 Tbsp
    flat leaf parsley, chopped
  • kosher salt & black pepper to taste
  • 2
    lemon wedges (optional)

How To Make garlicky pan-fried cod

    Cut the cod into two equally thick serving pieces. Wrap in paper towels and lightly squeeze so that the fish is dry. Season with salt and pepper to taste.

    In a medium skillet, heat the oil until it is very hot but not smoking. Reduce heat to medium-high and add the cod. Cook for 3-4 minutes, but do not disturb the fish.

    Flip the fish over - it should have a nice golden crust. Continue cooking for another 2-3 minutes depending on the thickness of the fish.

    Turn the fish over once again. Immediately add the pieces of butter and allow them to melt. Add the garlic and saute for a few moments to remove the raw burn, then add the chopped parsley. Baste the fish with the butter sauce.

    Serve immediately, with lemon wedges (optional) alongside.
