Ingredients For fried cellophane noodles with calamari

  • 6 oz
    cellophane noodles (glass noodles)
  • 3 Tbsp
    canola oil
  • 4 clove
    garlic, minced
  • 8 oz
    calamari, cut into rings and tentacles chopped.
  • 2 lg
    eggs, beaten
  • 1 md
    cucumber, seeded and sliced
  • 4 oz
    bean sprouts
  • 4 oz
    fresh spinach
  • 2 Tbsp
    fish sauce
  • 3 Tbsp
    brown sugar
  • 1 tsp
    sesame oil
  • Hoisin sauce, for garnish
  • chopped peanuts, for garnish

How To Make fried cellophane noodles with calamari

    Soak the cellophane noodles in hot water for about 10 minutes. Drain and cut into smaller lengths. Mix the fish sauce, brown sugar, and sesame oil and set aside.

    Heat the oil in a wok. Add the garlic and stir fry for 1 minute. Add the noodles and stir fry for about 3 minutes until browned. Add the shrimp and stir fry for another 2 minutes. Make a well in the middle of the wok and add the eggs cooking and incorporating them into the noodles.

    Add the cucumber, bean sprouts, spinach, and green onions. Stir fry until the spinach is wilted. Pour the fish sauce mixture over and cook for 1 minute.

    Serve drizzled with hoisin sauce and top with peanuts.
