Ingredients For colongo's soft shell crabs

  • flour, salt and pepper, garlic and shallots, chopped, 1/2 cup white wine, 1 soft shell crab, cleaned

How To Make colongo's soft shell crabs

    Melt butter in saute" pan. When butter is 300 F. add garlic and shallots to taste. Salt and pepper crab, lightly dust with flour. Place crab in pan, shell side up. Saute" 2 minutes, until crab is browned. Turn over crab and cook 2 minutes longer . Pour off butter and place pan back on over heat. Wait 45 seconds longer then add wine. The pan will flash flame, its the alcohol burning off. Also seals the flavor in. Serve fast with lemon slices and over your favorite side dish.
