Ingredients For cajun crab stuffed shrimp

  • 8 oz
    crab meat flaked
  • 1 lg
    egg
  • 1/4 c
    mayo
  • 3 Tbsp
    butter
  • 1 sm
    shallot minced
  • 2 clove
    garlic minced
  • 1
    green onion small dice
  • 2 Tbsp
    fresh parsley minced
  • 1 tsp
    cajun seasoning
  • 1/4 c
    buttery crackers such as ritz
  • 3 Tbsp
    grated parmesan cheese
  • 2 Tbsp
    mascarpone cheese
  • salt and pepper
  • 2 lb
    jumbo shrimp
  • 1
    lemon

How To Make cajun crab stuffed shrimp

    Preheat oven 375 degrees. Line a baking sheet with parchment paper and spray with cooking spray.

    Place the crab meat in a bowl. Season with salt and pepper. Add the egg and mayo and mix well. Set aside in fridge.

    Place the butter in a saucepan. Once it melts add the shallot, garlic, green onions, parsley and cajun seasoning. Saute for about 3 minutes then set aside to cool.

    once cool add to the crab meat mixture then crush the crackers and stir into the crab mixture. Add the mascarpone cheese and Parmesan cheese. Season with salt and pepper.

    Peel and devein the shrimp. Cut them down the back to the tail but not all the way through. Place in baking dish then spoon 1 to 2 tbsp of crab meat mixture on top. Spray with cooking spray.

    Bake until golden brown about 20 minutes. Serve with lemon wedges
