    butter
  • pinch of salt
  • water to mix
  • 8 oz
    grated gruyere or emmental cheese
  • salt and pepper to taste
  • freshly grated nutmeg to taste
  • ¾ oz
    flour
  • ¼ - ½ pt
    milk (or half cream and half water)
  • 3
    eggs

    Make the short crust pastry and line a 9-inch flan ring with it.
