not your everyday chicken pot pie

I have made numerous chicken pot pies, along with other pot pies for years and wanted something a little different. All I did was add some cream cheese with chives and...wow. Yeah... I'm loving it.

Ingredients For not your everyday chicken pot pie

  • 1 md
    red potato, diced
  • 1 md
    carrot, peeled and diced
  • 1 1/2 c
    frozen mixed veggies (I used Bird's Eye)
  • 1 1/2 c
    cooked and diced lightly seasoned chicken
  • 1 can
    98% fat free cream of chicken soup (10.5 oz)
  • 1/4 c
    cream cheese with chives (I used Philadelphia)
  • 1 box
    refrigerated or homemade pie dough (I used Pillsbury)

How To Make not your everyday chicken pot pie

    Heat oven to 400 degrees F. Lightly spray a 9" pie pan with cooking spray. (I also placed the pan on a cookie sheet just in case it bubbled over even though it didn't.)

    Place the frozen mixed veggies in a medium sized bowl. Place the diced potatoes in a microwave safe bowl with water and microwave 5 minutes to par-cook. Using a slotted spoon, spoon the potatoes into the bowl with the frozen veggies. Place carrots in the same bowl you just spooned the potatoes out from, add more water to cover, and microwave 7 minutes. Use the slotted spoon to spoon carrots into the bowl with the veggies.

    Add to the bowl the cooked diced or cubed chicken. In another medium sized microwave safe bowl, spoon the cream of chicken soup and the cream cheese. Stir and then microwave 1 minute. Whisk until smooth.

    Place 1 pie crust into pie pan to fit. Spoon the soup mix into the chicken and veggie mix and stir to combine. Spoon evenly into pie crust. Top with 2nd pie crust. Cut 2 slits into top crust. Lightly spray top crust w/ olive oil cooking spray. Cover the edges of pie w/ foil. Bake 30 minutes. Take out of oven, take foil off the edges, and bake additional 10 minutes or until crust is light brown and pie is bubbling just a bit. Let cool a few minutes befor cutting into and serving.
