tomato basil sandwich

This sandwich is so delicious, easy to make and oh so messy! A great way to use up extra tomatoes. I saw a video by Melissa Clark for a tomato sandwich and went from there. Be sure to use a very rustic, dense, crusty bread for the best results. (This is not for your everyday white bread.) Have plenty of napkins on hand!

Ingredients For tomato basil sandwich

  • 1
    very ripe homegrown tomato
  • 1
    tomato, sliced
  • 1 clove
    garlic cut in half
  • mayonnaise
  • onion sliced thin - as much as you like
  • mozzarella cheese, shredded or sliced
  • fresh basil leaves
  • salt and pepper as desired
  • 2 slice
    rustic bread, toasted - per person

How To Make tomato basil sandwich

  • 1
    Toast the bread. Rub one side of each slice with garlic.

    Slice the very ripe tomato in half and rub into the toasted bread.

    This is what the tomato will look like. (save for veggie soup or stock)

    Slather with mayonnaise.
  • 5
    Top with tomato slices, a little salt and pepper, onion, basil leaves and mozzarella.

    Top with the second piece of bread and serve. Note: You could add a couple of slices of crispy bacon, if desired.
