smashed avocado and egg sandwiches
I love avocado and yogurt and found this recipe on the back of a yogurt label. I added some herbs and voila!

Ingredients For smashed avocado and egg sandwiches

1/2avocado, ripe

3eggs, hardboiled

2-3 Tbspplain greek yogurt (fat free is fine)

4 slicemulti-grain, whole wheat, or rye bread

1/2 cspinach leaves
-
1/2 tspdried herbs of choice (i use mccormick's blend)

salt and pepper, to taste
How To Make smashed avocado and egg sandwiches

1In a bowl, smash together eggs and avocado. Mix in yogurt and herbs.

2Add salt and pepper to taste.

3Place spinach leaves on 2 slices of bread, add half of egg salad, cover with other slice of bread.
