sandwich essentials: pan-fried brisket butty

I came up with this sandwich on a whim. I had leftover brisket, and I wanted a different kind of sandwich. After four tries this is what finally emerged from the skillet. The “secret sauce” is my own invention, but feel free to experiment with other spices and condiments. So, you ready… Let’s get into the kitchen.

Ingredients For sandwich essentials: pan-fried brisket butty

  • PLAN/PURCHASE
  • SECRET SAUCE
  • 1 Tbsp
    mayonnaise, plain variety
  • 1 Tbsp
    brown mustard, i prefer grey poupon
  • 1 tsp
    prepared horseradish, grated
  • 1 dash
    hot sauce, i prefer frank’s
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste
  • THE SANDWICH
  • 1 Tbsp
    sweet butter, unsalted
  • 6 oz
    smoked brisket
  • 1
    butter-toasted kaiser roll, or bread of your choice
  • ADDITIONAL ITEMS
  • dill pickles
  • fresh coleslaw for topping
  • french fries, or chips

How To Make sandwich essentials: pan-fried brisket butty

    PREP/PREPARE

    For this recipe, a good cast-iron skillet would be nice; however, and good frypan will do nicely.

    Gather your Ingredients (mise en place).

    In a small bowl, mix all the ingredients for the “secret sauce” together.
  • 5
    Fold in the brisket, and combine.
  • 6
    Add the butter to a pan over medium-high heat.
  • 7
    When the foaming subsides, add the brisket, and shape into a patty, the size of your bun.

    Allow it to sit, undisturbed in the pan until a crust forms, about 3 – 4 minutes.

    Carefully flip, and allow to cook an additional 2 – 3 minutes.

    Chef’s Note: The brisket will not be firm like a hamburger patty, so be careful when flipping.

    Chef’s Note: What you will have is a brisket burger that is crispy on the outside, and soft on the inside.

    Place on the butter-toasted bun, top with a bit of coleslaw, and serve with some fries or chips. Enjoy.
