sandwich essentials: down home fish sliders
I had a craving for a fish sandwich; however, I didn’t want to make a spicy, or regional statement… I just wanted a nice tasting fish sandwich, with clean fish taste. In this recipe, I made the fish the star of the show, and not the spices, so choose a good fresh variety of firm white fish. I choose cod. So, you ready… Let’s get into the kitchen.

Ingredients For sandwich essentials: down home fish sliders
- PLAN/PURCHASE

1/2 lbcod filets (or other firm white fish), cut to fit the buns

6 mddinner rolls
-
1/2 cflour, all-purpose variety
-
salt, kosher variety, to taste
-
white pepper, freshly ground, to taste
- THE BATTER
-
1 cflour, all-purpose variety
-
1 pinchcayenne pepper, or to taste
-
1 Tbsparrowroot powder
-
1/2 tspbaking powder
-
1/2 tspgarlic powder
-
6 ozclub soda
- ADDITIONAL ITEMS
-
grapeseed oil, or other non-flavored oil, for frying
-
lettuce, for garnish

sliced tomato, for garnish
-
tartar sauce, for dressing the buns
How To Make sandwich essentials: down home fish sliders

1PREP/PREPARE

2Gather your Ingredients (mise en place).

3Cut the fish to match the size of the buns that you are using.

4Chef’s Note: For these sliders, I’m using my homemade yeast rolls.

5Add the 1/2 flour, and some salt and pepper, to a shallow dish.

6Add enough oil to a small pan, or pot to come to a depth of 1-inch (3cm), and heat to 350f (175c)

7THE BATTER

8Add all the ingredients for the batter, except the club soda, to a small bowl, and whisk to combine.

9Add the club soda in a steady stream, and mix until combined, but don’t over mix.

10Chef’s Note: A few lumps in the batter is okay; in fact, it’s expected.

11Dredge the fish pieces in the flour, and thoroughly coat.

12Shake off the excess, and dip them into the batter.
-
13Immediately add the battered fish to the hot oil, and repeat for the remainder of the fish.

14Pan fry until they are golden brown, about 2 – 3 minutes per side, and then drain on paper towels.

16Brush a bit of tartar sauce to the bottom half of the rolls.

17Add some lettuce and a thin slice of tomato.
-
18Add the breaded fish, and top with a bit more tartar sauce.
-
19Serve while nice and warm with some coleslaw, chips, fries, or whatever you fancy. Enjoy.
