sandwich essentials: bacon, cheese, pickle on rye
This is what I would describe as my “kicked up” version of a grilled cheese. My cheese of choice is sharp cheddar; however, choose whatever type you fancy. Easy/Peasy to make, and the siracha gives it a bit of heat. And, something great to go along with this would be some yummy tomato soup. So, you ready… Let’s get into the kitchen.

Ingredients For sandwich essentials: bacon, cheese, pickle on rye

2 Tbspmayonnaise

1 - 2 dashsiracha

2 slicerye bread

2 slicebacon, diced

1 ozsharp cheddar cheese, freshly grated

6 - 8 slicedill pickles, thinly sliced
How To Make sandwich essentials: bacon, cheese, pickle on rye

1PREP/PREPARE

2Gather your ingredients (mise en place).

3Place the bacon into a pan over medium heat, and cook until crispy, about 3 – 5 minutes.

4Drain on paper towels, and reserve. My little buddy (Guru) wants him some bacon.

5Remove the bacon grease from the pan.

6Add the siracha and mayonnaise together and spread half on one side of the rye bread.

7Chef’s Note: For a bigger bang, add more siracha.

8Add the bread, mayo side down to the pan, then add half the cheese.

9Add the bacon.

10Add the pickles.

11Add the remainder of the cheese.

12Add the other rye slice to the top, and brush with the remaining mayo/siracha.

13Cook over medium to medium-low heat, until toasted on both sides, and the cheese is nice and melty, about 3 – 4 minutes per side.

14I use a weight to press down on the sandwich as it is cooking.

15PLATE/PRESENT

16Serve while still hot with chips, or whatever you fancy. Enjoy.
