sandwich essential: buffalo chicken grilled cheese
I came up with this recipe a few weeks ago, at least on paper. Last evening, I could not sleep, so I spent most of the night, and wee hours of the morning playing about with this sandwich. The two cheeses, chicken, hot sauce, and pickles give it several layers of flavor. I would serve it with some chips or fries, and a beer or two. So, you ready… Let’s get into the kitchen.

2 slicebread, lightly toasted, your choice

2 Tbspsweet butter, unsalted, softened

1 Tbspmayonnaise, plain variety

1 ozsharp cheddar cheese, freshly grated

1 ozpepper jack cheese, freshly grated

2 slicedeli chicken, thinly sliced

dill pickles, thinly sliced

hot sauce, to taste, i prefer frank’s

black pepper, freshly ground, to taste
- OPTIONAL ITEMS

bread-and-butter pickles, for topping

tomato soup, for eating and dipping

1PREP/PREPARE

2You will need a skillet to make this recipe.

3I like to use thinly sliced dill pickles in the sandwich, and then top with a few bread-and-butter pickles. That helps to add to the sandwiches' flavor levels.

4The only hot sauce I used for this recipe is Frank’s. It has a vinegary tart flavor that I really love.

5Gather your ingredients (mise en place).

6Mix the butter and mayonnaise together in a small bowl and add a pinch or two of hot sauce.

7Add the two cheeses to a bowl and toss with some hot sauce and a bit of black pepper.

8Lay one of the lightly toasted bread slices on a clean surface and add half the cheese.

9Add the chicken.

10I do not have a photo of this step, my bad, but add the thinly sliced pickles. And they should be almost “paper” thin.

11Add the remainder of the cheese, and top with the second slice of lightly toasted bread, then brush with the butter/mayo mixture.

12Lay in a cold skillet, butter side down, then butter the top slice, and bring the heat up to medium.

13Cook until lightly toasted and then flip, about 3 – 4 minutes.

14Flip and toast the second side until golden brown, about an additional 2 – 3 minutes.

15PLATE/PRESENT

16Serve while warm and gooey, with some additional pickles and maybe some chips. Enjoy.
