After eating Greek food in Greece it has changed my mind on how its done here in the states. this is a great recipe and about as close to authentic as you can get.

Ingredients For pork tenderloin souvlaki

1pork tenderloin

4 clovegarlic minced

1/4 colive oil

1lemon, fresh juiced

2 Tbsporegano, greek dried

2roma tomato, seeded and sliced

1/2onion, red sliced thin

1/2cucumber, slicec

1 ctzatkizi sauce
How To Make pork tenderloin souvlaki

1Butterfly tenderloin and cut in long 3/4" x 1/4" thick strips. Cut strips in half if to long

2Marinade pork in olive oil, lemon juice, garlic, and oregano for at least 1 hour

3put strips on skewers and grill on medium heat for roughly 4 minutes a side. watch meat closely as oil will cause flare ups if heat is too high.

4cut your onions, tomato, and cucumber

5warm pita slightly on grill or in microwave

6add a layer of tzatziki to pita, add meat, tomato, onion, cucumber slices and a little more tzatziki on top. enjoy
