Ingredients For mexican chicken sub

2 lgchicken breasts, grilled and sliced

4 slicebacon, cooked

1/2 cchipotle mayo, or more to taste

4submarine sandwich rolls, ciabatta or italian rolls

2/3 cfresh guacamole
-
1/2 cshredded cheese of your choice (i use mexicana and habañero mixed together)

1-2 lgfresh ripe tomatoes, sliced
-
freshly ground black pepper, to taste (i always use mixed peppercorns)

1/2 lglime, freshly squeezed
How To Make mexican chicken sub

1In a small bowl, mix mayo and chipotle puréed; set aside. Preheat grill; season chicken with pepper. Cook over medium for 5 to 7 minutes per side or until cooked through; slice chicken thinly and sprinkle fresh lime juice over top.

2Spread chipotle mayo on bottom half of each roll and top with sliced chicken, bacon, *Guacamole, cheese and sliced tomato. Serve with salad or coleslaw.
