Ingredients For mexican chicken sub

  • 2 lg
    chicken breasts, grilled and sliced
  • 4 slice
    bacon, cooked
  • 1/2 c
    chipotle mayo, or more to taste
  • 4
    submarine sandwich rolls, ciabatta or italian rolls
  • 2/3 c
    fresh guacamole
  • 1/2 c
    shredded cheese of your choice (i use mexicana and habañero mixed together)
  • 1-2 lg
    fresh ripe tomatoes, sliced
  • freshly ground black pepper, to taste (i always use mixed peppercorns)
  • 1/2 lg
    lime, freshly squeezed

How To Make mexican chicken sub

  • 1
    In a small bowl, mix mayo and chipotle puréed; set aside. Preheat grill; season chicken with pepper. Cook over medium for 5 to 7 minutes per side or until cooked through; slice chicken thinly and sprinkle fresh lime juice over top.

    Spread chipotle mayo on bottom half of each roll and top with sliced chicken, bacon, *Guacamole, cheese and sliced tomato. Serve with salad or coleslaw.
