marble rye red pepper hummus toasts with pepitas

I was looking for a quick lunch and had these ingredients handy. I made the toast and loved it. Hummus Toast has become my new fav toast (over avocado toast) as a quick snack/meal. I hope everyone gives it a try and you all enjoy it as much as I do.

    marble rye bread
  • 2 Tbsp
    hummus
  • 2 Tbsp
    pepitas, roasted and salted

How To Make marble rye red pepper hummus toasts with pepitas

    Toast the marble rye bread slices. The may not fit into your toaster but they do in mine. I toast them on a medium low setting so they don't burn. I use Pepperidge Farm Marble Rye. I tied my Deli's one time and I didn't like the quality and taste. You can use Pumpernickel or Plain Rye. You can toast the bread in your toaster oven by following the ovens directions. You may also toast the bread by laying it on a hot grill pan or griddle. I do not add oil, butter or mayo to the pan or bread but you can if you wish. It is your toast so make it like you want.

    Spread 1 tbsp of the hummus on each slice of toast on one side only. For the hummus, you can make your own by blending drained canned chickpeas or any "white" bean (navy, October, Cannellini) with olive oil or tahini, lemon juice and roasted garlic. I buy my hummus at walmart (their brand) and I like the roasted red pepper or plain. If you get the plain you can "spice" it up by adding a pinch of your favorite seasoning like Za'atar, herbs de provence, italian seasoning....just anything...to the hummus on each slice of toast. This little recipe is so versatile.

    Top each slice of hummus spread toast with one tbsp of the toasted Pepitas. You can use the un-toasted if you prefer them. You can even use sunflower seeds, everything bagel seasoning, chopped peanuts.....I just wanted the crunch and I'm trying to eat more pumpkin seeds.
