Adapted from I Love Food dot Com Malta and adjusted a bit. I usually think of egg salad as being cut-up eggs with other ingredients. Surprise! This is sliced eggs with assorted veggies!

Ingredients For maltese egg salad sandwich

  • 1
    baguette
  • 2-3 Tbsp
    mayonnaise
  • 2 oz
    spring mixed greens
  • 1/2
    avocado
  • 3
    hard boiled eggs
  • salt and pepper to taste
  • red onions and pickles, sliced thinly for garnish

How To Make maltese egg salad sandwich

    Slice baguette in half, remove ends and toast lightly. Spread mayonnaise on both sides.

    Top one half with mixed greens, avocado slices and egg slices. Season with salt and pepper.

    Top eggs with thin slices of red onions, and pickles. Put top back on sandwiche, gently pressing together and serve.
