This is North African inspired and can be either lunch or dinner depending on what you choose to have with it. You can also serve the chicken patties with couscous tossed with golden raisins or apricots and no pita.

2(6-inch) pitas, cut in half

2 Tbspchopped green onions

1/2 Tbspras el hanout seasoning (purchased or homemade)

1/4 tspcoarsely ground black pepper

1 lgegg white, lightly beaten

1/2 lbground chicken

1 tubegrated lemon rind, divided

1/2 Tbspolive oil

1/4 cplain fat free yogurt

3/4 tspchopped fresh cilantro

2(6-inch) pitas, cut in half

1 cshredded lettuce

1/4 cdiced tomato or more if you like

1Combine first 6 ingredients; add 1/2 teaspoon rind, stirring well. Divide mixture into 4 equal portions, shaping each into 1/4-inch-thick oval patties.

2Heat oil in a large nonstick skillet over medium-high heat. Add patties; cook 2 minutes on each side or until browned. Cover, reduce heat to medium, and cook 4 minutes

3Combine remaining 1/2 teaspoon rind, yogurt, and cilantro, stirring well. Fill each pita half with 1 patty, equal portions yogurt mixture, 1/4 cup lettuce, and 1 tablespoon tomato.
