This is North African inspired and can be either lunch or dinner depending on what you choose to have with it. You can also serve the chicken patties with couscous tossed with golden raisins or apricots and no pita.

    (6-inch) pitas, cut in half
  • 2 Tbsp
    chopped green onions
  • 1/2 Tbsp
    ras el hanout seasoning (purchased or homemade)
  • 1/4 tsp
    coarsely ground black pepper
  • 1 lg
    egg white, lightly beaten
  • 1/2 lb
    ground chicken
  • 1 tube
    grated lemon rind, divided
  • 1/2 Tbsp
    olive oil
  • 1/4 c
    plain fat free yogurt
  • 3/4 tsp
    chopped fresh cilantro
  • 2
    (6-inch) pitas, cut in half
  • 1 c
    shredded lettuce
  • 1/4 c
    diced tomato or more if you like

How To Make lemon chicken pita burgers, spiced yogurt diabetic

    Combine first 6 ingredients; add 1/2 teaspoon rind, stirring well. Divide mixture into 4 equal portions, shaping each into 1/4-inch-thick oval patties.

    Heat oil in a large nonstick skillet over medium-high heat. Add patties; cook 2 minutes on each side or until browned. Cover, reduce heat to medium, and cook 4 minutes

    Combine remaining 1/2 teaspoon rind, yogurt, and cilantro, stirring well. Fill each pita half with 1 patty, equal portions yogurt mixture, 1/4 cup lettuce, and 1 tablespoon tomato.
