This sandwich has a lot of Nostalgia for my family, two of my favorite people loved fried bologna sandwiches. One of whom grew up in a junkyard, eating them all through her childhood. I created the sandwich to celebrate her memory, and it has turned out to be one of our favorites.

Ingredients For junkyard special

  • 1/2 c
    yellow mustard
  • 2 Tbsp
    pickled jalapeno, chopped
  • 3 Tbsp
    pickled banana peppers, chopped
  • 2 Tbsp
    pickled sweet cherry peppers, chopped
  • 2 lb
    beef bologna, sliced (16 slices per pound)
  • 16 oz
    french fried onions
  • 1/2 c
    mayonnaise
  • 12 slice
    texas toast style white bread

How To Make junkyard special

  • 1
    Mix together mustard, chopped jalapenos, banana peppers, and cherry peppers. Set aside until ready to use.

    In a large skillet over medium high heat, fry bologna until browned and crispy on the edges. Cut slit in the edges to prevent the bologna from bubbling.

    Slather one side of 6 slices of bread with the mustard and pepper mixture. Spread mayonnaise on the other side of that piece of bread. Place into skillet mayo side down. Pile on 5-6 slices of bologna on top of the mustard mixture. Sprinkle a generous amount of French fried onions on top of the bologna. Spread mayo on both sides of the remaining pieces of bread top of the sandwich. Toast both sides of sandwich until golden brown. Serve immediately.
