This is an easy and fun way to serve Meatball Subs.... It is not as messy either! All the flavors and joy of a good Meatball Sub, but serving in a easier to make and eat way... Even the littlest children love this! I developed this recipe to serve for a sporting event... had everything ready and let the adults help the children and themselves! It was a big hit! Not one child said, "Oops! My meatball fell out!" Play with your food! xo

Ingredients For inside out meatball subs!

  • MEATBALLS
  • 2 bag
    frozen meatballs
  • SAUCE
  • 1 md
    onion (chopped)
  • 1 md
    bell pepper (chopped)
  • 2 stick
    celery (chopped)
  • 1 lg
    eggplant (chopped)
  • 3 jar
    pasta sauce of choice
  • 1 can
    diced tomatoes
  • 1 Tbsp
    basil (dried or fresh)
  • 1 Tbsp
    garlic (minced fine)
  • 1 tsp
    garlic powder
  • 1 tsp
    black pepper
  • BREAD
  • 1 lg
    french bread (sliced)
  • TOPPING
  • 2 c
    mozzarella cheese (shredded)

How To Make inside out meatball subs!

    Put frozen (or thawed) meatballs in a large skillet. Brown well.

    Add onion, celery and bell pepper. Cook about 3 minutes.

    Add the eggplant, cook about 5 minutes, stirring constantly.

    Add the sauce, diced tomatoes, garlic and spices. Simmer about 15 minutes, stirring. The sauce will thicken and get darker and richer.

    Place desired amount of slices of bread on an angle in a serving bowl (we use 1 to 3 slices).

    Scoop some sauce and meatballs into center of bowl.

    Top with Mozzarella Cheese. Serve!
