Crunchy and delicious! We love this stuffed in a pita or just on it's own. We have also made it adding fresh herbs from our garden in the summer for an extra layer of flavors.

Ingredients For guiltless chicken salad

  • 12 oz
    poached chicken, diced
  • 1 1/2 c
    chopped celery (about 3 ribs)
  • 1 c
    jicama, chopped (peeled first)
  • 1/2 c
    onion, diced
  • 1/4 tsp
    black pepper
  • 1/8 tsp
    salt
  • 1/2 c
    fat free greek yogurt
  • 1/2
    lemon, juiced

How To Make guiltless chicken salad

  • 1
    Combine all ingredients in a large mixing bowl, cover and chill for 30 minutes. Refrigerate for up to four days.
