I found this in a cookbook put out by Costco®. It sounded like a great combination of ingredients and reminded me of rustic French-Canadian cuisine.

Ingredients For grilled brie and baby spinach sandwiches

1 Tbspextra-virgin olive oil

1 clovegarlic, minced

1 bagspinach (16 oz)

2 Tbspbutter (or margarine)

8 slicehearty whole grain bread

2 Tbspapricot jam (plum, chokecherry, etc.)

8 ozbrie cheese, sliced
How To Make grilled brie and baby spinach sandwiches

1Heat oil in medium skillet. Saute garlic briefly. Add spinach and cook until it wilts slightly. Set aside.

2Melt butter in large skillet over medium heat. grill bread slices on one side until evenly brown.

3Spread jam on un-browned side of 4 slices. Top each with 2 slices of Brie and a large spoonful of spinach. Cover with remaining bread slices, grilled side up.

4Slice sandwiches in half to serve.
