fish essentials: comfy cod sammie
I have been craving a fish sandwich for a long time. But, I did not want the typical “fried” fish variety, but something more akin to a po’ boy. This is not exactly what I would call a “po’ boy,” but it is fairly close. For one, there are no Cajun spices, and I am using cod; as opposed to a more traditional shrimp. So, you ready… Let’s get into the kitchen.

4Cook the bacon in a sauté pan over medium heat, until crisp.
-
5Remove the bacon, and chop. Leave the bacon grease in the pan. We will need that later.
-
6Combine all the ingredients (including the bacon) for the dressing together in a bowl, and then salt and pepper, to taste.
-
7THE COD
-
8Take the sauté pan with the bacon grease, and place over medium-low heat.
-
9Sprinkle the cod with some salt and pepper, and add to the pan.
-
10Sauté, turning occasionally, until the cod is cooked through, and begins to flake.
-
11Allow the cod to cool to room temperature, flake, and gently toss with the dressing.
-
12Add some lettuce to the bottom of a toasted bun.
-
13Add some fresh tomatoes.
-
14Add the cod mix.
-
15PLATE/PRESENT
-
16My favorite way to serve this is on a butter-toasted brioche roll, with some freshly-sliced tomatoes, tipped with a bit of parmesan cheese, and chips on the side. Enjoy.
