Okay… this one is just for fun (although it did turn out pretty good). I just decided what crazy thing I could come up with based on ingredients on hand. It’s got three kinds of cheese, pepperoni, tomatoes, and pizza sauce… what could go wrong. So, you ready… Let’s get into the kitchen.

Ingredients For double grilled, triple stack grilled cheese pizza

  • PLAN/PURCHASE
  • 3 slice
    sourdough bread, or whatever bread you choose
  • 4 Tbsp
    sweet butter, salted, melted (for brushing)
  • 1/2 c
    mozzarella cheese, freshly grated
  • 1/2 c
    sharp cheddar cheese, freshly grated
  • 2 Tbsp
    parmesan cheese, freshly grated
  • 6 to 8 md
    pepperoni slices, thick sliced
  • 3 Tbsp
    pizza sauce, your choice
  • 1 md
    tomato, thinly sliced

How To Make double grilled, triple stack grilled cheese pizza

    PREP/PREPARE

    Gather your ingredients.
  • 3
    Take two of the bread slices, and brush one side with the melted butter.
  • 4
    Place in a skillet over medium heat.
  • 5
    Cook until nice and toasty, on one side, and then reserve.

    Brush both sides of the third piece of bread with melted butter.
  • 7
    Toast both sides, and then reserve.

    Take one of the single-toasted pieces of bread, and lay on a clean surface, toasted side up.

    Brush 1/2 of the pizza sauce on the bread.

    Add 1/2 of the mozzarella cheese.

    Add the pepperoni slices.
  • 12
    Add 1/2 of the Parmesan cheese.

    Add 1/2 of the cheddar cheese to the top.

    Place the double-toasted piece of bread on top.

    Brush with the remainder of the pizza sauce.

    Add the remaining half of the mozzarella cheese.

    Add the sliced tomatoes.

    Add the remainder of the Parmesan cheese.

    Add the remainder of the cheddar cheese.

    Add the last slice of bread, toasted side down, and brush the top with some melted butter.

    Flip and place into the pan. Reduce the heat to medium low, and then add a weight to the top of the sandwich.

    Allow the sandwich to cook until the bottom begins to brown, and the cheeses begin to melt, about 5 - 8 minutes.

    Remove the weight, and brush the top with the remaining melted butter.

    Flip the sandwich over.

    Return the weight, and allow the sandwich to finish cooking for an additional 5 to 8 minutes.
