This creation came from a combination of two recipes from two different local restaurants. I love all things seafood and cheese and what a fabulous combination these kinds of seafood make when together. Sometimes, right around Father's Day, I can get Alaska King Crab legs at the store for $10-$12 a lb. That's almost a steal! This grilled cheese will rise up to be one of your favorite grilled sandwiches... I can almost promise.

You won't get crabby after one bite of this lovely sandwich. You'll feel like you are eating lunch at a fancy seaside restaurant. Sourdough is a great choice for bread. Crispy and chewy, it pairs well with the creamy and tangy flavors of the cream cheese mixture. Sherry's seafood mix has a very mild flavor that complements the cream cheese. Swiss cheese adds a hint of sweetness. You're gonna love this sandwich!

Ingredients For crabby grilled cheese sandwich

  • 2 Tbsp
    butter
  • 1 tsp
    minced garlic
  • 1/2 lb
    jumbo shrimp, shelled and deveined (about 9 prawns)
  • 2 Tbsp
    good olive oil
  • 1 lb
    scallops, rinse well
  • 8 oz
    crab (flaked)
  • 4 oz
    optional: krab (imitation crab)
  • 1/2
    lemon (juiced)
  • 1 Tbsp
    dill weed
  • 1/2 c
    cream cheese
  • 3 Tbsp
    optional: green onions, diced
  • slice
    Swiss cheese
  • slice
    sourdough bread
  • 2 Tbsp
    butter, for toasting the bread
  • 2-3
    lemons, sliced to serve with the sandwiches

How To Make crabby grilled cheese sandwich

  • Sauteeing shrimp in a pan.

    Saute shrimp in butter with garlic. Remove to plate when pink. Then give a rough chop.
  • Sauteeing scallops in a pan.

    In the same skillet, saute scallops in the remaining butter, adding a little olive oil. Braze 2 minutes and turn. Don't overcook! Give a rough chop.
  • Combining krab, scallops, and shrimp in a mixing bowl.

    In a bowl, combine the crab, krab (if using), shrimp and scallops.
  • Cream cheese, lemon juice, dill, and scallions in a bowl.

    In another bowl, mix cream cheese, dill, and lemon juice. Optional: Can add green onion.
  • Building the grilled cheese sandwich.

    Butter sourdough bread on one side. Slather the cream cheese mix on the other side. Top with sliced Swiss cheese. Top with seafood mixture. Top with another slice of Swiss cheese and buttered sourdough with cream cheese mix on the other side.
  • Grilling sandwich until toasted and cheese is melted.

    Grill until toasty brown.
  • Crabby grilled cheese sandwich on a plate with sliced lemons.

    Serve with lemon wedges.
