corned beef & cabbage hoagies
I made this recipe because I discovered some chopped corned beef in my freezer that I needed to use and I wanted to do something different with it. This came out really good!

Ingredients For corned beef & cabbage hoagies
- FOR THE TOPPINGS

2 cshredded cabbage or fresh cole slaw mix

1 lgthinly sliced onion

1 Tbspbutter
-
1 Tbspextra virgin olive oil
- FOR THE SANDWICH

1 pkgpepperidge farm bakery classics top sliced hot dog buns, toasted

2 lbcooked corned beef brisket, chopped

8 sliceswiss cheese
How To Make corned beef & cabbage hoagies

1In a large skillet melt butter with olive oil over medium high heat.

2Add onions. Saute until starting to caramelize. Add shredded cabbage and cook until cabbage is wilted.

3Add diced corned beef brisket to hot dog bun. Top with fried cabbage mixture and a slice of swiss cheese.

4Place sandwiches on a cookie sheet and place in oven under broiler, just until cheese starts to brown and tops of bread starts to toast. (1 or 2 minutes)

5Serve with Chips or Fries and a Pickle!
