Ingredients For brioche lobster rolls

1/2 cmascarpone cheese at room temp

1/4 colive oil

1 Tbspfresh tarragon leaves chopped

2 Tbspfresh chives chopped

zest of 1 lemon

1 tsplemon juice

2 clovegarlic minced

salt and pepper

1/2 lbcooked lobster meat

4brioche buns
How To Make brioche lobster rolls

1Cook the lobster in butter or boiling water and set aside in fridge to cool.

2Combine the Mascarpone cheese and olive oil until smooth. Stir in the tarragon, chives, lemon zest and juice, garlic, salt and pepper.

3Cut the lobster into big chunks. Add the lobster to the mascarpone mixture and mix well. Serve on the brioche buns.
