This recipe took a few tries to get it right. Definitely Tried and True and worth the effort! This combination makes a beautiful and satisfying open-faced sandwich that should be pleasing to anyone who likes avocado, bacon and cream cheese. Serve with pickles and Vinegar and Salt potato chips. Enjoy!

  • INGREDIENTS
  • bread of choice, i used glutino gluten-free english muffins
  • 2
    slices cooked, crisp bacon cut into 2 inch pieces
  • 2
    tbs philadelphia whipped cream cheese
  • 2
    tbs sun dried tomatoes in olive oil, chopped fine
  • 1
    large, ripe but firm avocado cut into thick slices
  • 2
    tbs green onions, chopped fine (just the green part)
  • kosher salt to taste

    HOW TO LAYER EACH SANDWICH HALF: This is what you will need to get started.

    ½ Toasted Glutino Gluten-Free English muffin

    Spread 1 TBS cream cheese on the toasted muffin

    Add 1 TBS sun dried tomatoes, chopped fine
  • 5
    Add 1 TBS green onions, chopped fine (just the green part) and press tomatoes and onions into the cream cheese.

    Add 1 slice of bacon, cooked crisp and broken into 2 inch pieces

    Add 3 thick slices of avocado, and sprinkle with kosher salt and coarse black pepper to taste.

    Cook's Tip: The Glutino Gluten-Free English Muffin is not like your standard wheat English Muffin. It has the appearance of a bun, but is larger and thicker, and it has the texture of a good sandwich roll. It is pretty and makes tasty sandwiches.
