    eggs
  • 1
    avocado, peeled and pitted
  • 2 Tbsp
    Kewpie or regular mayonnaise
  • 1 Tbsp
    lemon juice
  • 1 tsp
    Dijon mustard
  • salt and pepper
  • bread of choice

How To Make avocado egg salad sandwich

  • 1
    Boil the eggs about 10 minutes until hard boiled. Remove eggs to a ice bath. Let cool. Peel and mash with the avocado.

    Stir in the remaining ingredients and serve on bread.
